Excitement as new city centre bistro lounge set to open in two weeks

PNKS bistro is hoping to open its doors to customers before August 12

Owner and head chef, Ash Biggs, has taken the leap from cooking to owning his own eatery. He said: “It’s always been a dream of mine to open a restaurant. I’ve got five children and three of them are triplets, so I decided the time is now. I need to support my family.

“I’ve been cooking since the age of 12 and I’ve got all my inspiration from my grandma. She’s West Indian and I’ve designed the menu to have a Caribbean touch to it, adding a few extra spices to make it different to everywhere else.”

PNKS is located on Wollaton Street and will be open seven days a week from 11am until midnight. The menu consists of smash burgers, mac and cheese, chicken wings, loaded fries and milkshakes which Ash says he will be putting his own twist on.

The business aims to stand out from others, hence why they have chosen the colour pink. The interior has pink seats and tables and is also decorated with flower walls.

The independent establishment will be offering a delivery and collection service as well as dining in. They hope this will be quick and efficient.

Ash added: “We are the boujee-est place in Nottingham. We are trying to stick out.” He has worked in the industry since the age of 16 and before deciding to start this venture worked in Wagamama for ten years.

Working in an Asian style kitchen has inspired him to look at the bigger picture and combine flavours together effectively. He said: “My fusion of flavour will make me stand out from everybody else. Combining my experiences within cooking will bring something different to the table. There’s a lot of people out there that have already tried my food and they know it’s good.”

Located nearby to students PNKS are looking forward to serving the younger community but want to emphasize that their restaurant is open for all the general public. The venue also has an upstairs that they have several different ideas for that will hopefully be opened in the future.

They will be holding a grand opening and will release the confirmed opening date on their social media. This event will include some well-known guests but details of this will be revealed later.

Ash added: “I’d like to say thank you for the support to everyone that has been supporting so far and I will be looking forward to seeing you guys soon.”
